Owner, Boyd Bissell, is also the maker of Heidelberg Bread in Herkimer, NY. Boyd learned the fine points of sophisticated European dining while in his twenties apprenticing at various grand restaurants in Paris.
Head sous chef, Jean Marie, grew up in Strasbourg in the Alsace region of Northeastern France near Germany. The cuisine in his hometown has been for centuries a blend of the French and German cultures.
As Jean Marie says, “As in Strasbourg, our food here at the Balkan and Hadley Restaurants is French with a German accent.” And Boyd’s chefs prepare dishes for you the way Jean Marie’s mother did for him growing up in Strasbourg.
They bake fresh Heidelberg bread on premises and marinate all of their unprocessed pork, beef, chicken, and turkey. They even make their own bacon and pastrami—curing, smoking, and cooking it on premises. (The staff boasts there’s probably not a restaurant in New York State that does that!)
